During my travels to Los Angeles, I thought it would be nice to head to the beach. And what a better place to do that than Hermosa Beach? As I walk down this surfer’s paradise, I am scoping out where to grab a bite. Little did I know that where I stopped would alter my perception of great wings forever.

My views of great wings have always been pretty straightforward: Hot enough but still very flavorful, crispy exterior but not over-fried, tender meat with good temperature… But this plate took them all by storm.

The first thing I noticed about this order was how large the wings were compared to the normal bar food I am used to. Then my eyes glanced over to see that they did not have enough sauce coating the wing. (This coming from a man who drowns his wings; I prepare for no heat.) But that all changed the moment I took the first bite. This wing was baked, then fried, and the sauce was worked right into the skin of the wing alongside some pepper and other spices that made my mouth water. It was right at the peak of my heat tolerance, which was just the way I like it. Because of the method of cooking, the meat practically fell right off the bone; it was so tender.

I was so impressed with these wings that they rank currently as one of my all time favorites. Every time I find myself near LA, I make darn sure that I swing in for some.
